Chubby Group is preparing for a significant new phase of expansion after securing $50 million in Series A funding led by Prysm Capital and signing an agreement to acquire 47 GEN Korean BBQ restaurants and four development sites in a transaction valued at up to $100 million. As reported by L.A. Business First, the proposed acquisition includes plans to transition restaurants in four phases over 12 months, with the first phase targeted for November 2026. The company plans to introduce GEN X, a wagyu-forward Korean barbecue concept, as part of its strategy to build on GEN’s existing restaurant network while expanding its national hospitality presence.
For Chubby Group, the opportunity extends beyond acquiring established locations. The company plans to refresh restaurant interiors, elevate hospitality standards, and integrate participating restaurants into its vertically integrated supply chain and Chubby Club membership ecosystem. By purchasing whole cattle and chickens, operating direct seafood sourcing programs, and distributing ingredients through its own infrastructure, Chubby Group has developed an operating model designed to improve quality and efficiency across its portfolio. The proposed GEN X transformation creates an opportunity to bring those capabilities into an established Korean barbecue brand while maintaining the social, interactive dining experience familiar to existing guests.
The larger business takeaway is that acquisitions create the greatest long-term value when they improve the business behind the restaurant. Expanding an existing network offers immediate geographic reach, but sustainable growth depends on consistent execution, stronger operations, and a differentiated guest experience. For Chubby Group, the planned GEN X rollout represents an opportunity to demonstrate how supply-chain integration, premium ingredients, restaurant design, and customer loyalty can work together to transform established locations into a more connected and scalable hospitality platform.
