Chubby Group has reached a significant milestone in its growth journey, closing a $50 million Series A funding round led by Prysm Capital at a $500 million valuation. The company also announced an agreement to acquire 47 GEN Korean BBQ restaurants and four development sites in a transaction valued at up to $100 million. Since opening its first restaurant in 2016, Chubby Group has grown into a hospitality platform with more than 70 locations across over 25 brands, including Chubby Cattle, Wagyu House, The X Pot, NIKU X, Chubby Skewers, and Chubby Bowls. With systemwide revenue reaching $233 million in 2025 and projected to reach $400 million in 2026, the company is entering a new phase of national expansion.
For Chubby Group, this investment represents more than financial backing. It validates a business model built around vertical integration, direct sourcing, operational efficiency, and premium hospitality. By purchasing whole cattle, managing seafood sourcing, and operating its own supply chain, the company has developed a system designed to deliver high-quality ingredients at competitive prices. The new funding will support further supply chain expansion and restaurant development, including plans for 30 new Mr. Chubby and Chubby Bowls locations in 2027. The proposed GEN acquisition would further extend this operating model into an established national restaurant network, while the Chubby Club membership ecosystem strengthens customer engagement across the group’s growing portfolio.
The larger business takeaway is that sustainable growth comes from building the infrastructure behind the brand, not simply increasing the number of restaurants. Chubby Group’s approach combines supply chain ownership, restaurant development, technology, and customer loyalty into a connected hospitality platform. With approximately 450,000 Chubby Club members and plans to expand its national footprint, the company is demonstrating how operational discipline and premium dining can support one another. The next chapter is about using that foundation to create greater value for guests, strengthen consistency across locations, and build a hospitality business designed for long-term scale.
